(For Friday Favorites we spotlight past recipes that you may have missed, and this Slow Cooker Easy Chicken Mole comes highly recommended.)

One of the famous dishes of Mexican cooking is the delicious mole sauces, often served over chicken or turkey and featuring a bit of chocolate to add complexity to the sauce.  Moles are often very complicated, but this Easy Slow Cooker Chicken Mole from Everyday Southwest can be in the CrockPot in 20 minutes.  After it cooks for 6 hours you need a few hours to finish the dish, but it mostly cooks unattended, and Donna says this mole is "shockingly" good.

  1. This is a recipe that really teaches me to see my slow cooker in a different light. I love to make mole, but don't do it often because traditional recipes can be time consuming. The slow cooker makes a complicated recipe easier, and one I'm likely to make more often now.

  2. Lydia, I loved that about this recipe too.

  3. We had this recipe for dinner tonight and we loved this mole' sauce! Perfect combination of spices, chocolate, and dried peppers. Be prepared..this makes a huge amount of sauce. We have enough to freeze for a second meal easily. The only change I will make on the second round is to put the chicken in the slow cooker earlier so it fork tender. Thanks for an easy and delicious mole' which does not take hours to make. Will definitely be making this again!

  4. Sue, thanks for reporting back; so glad you enjoyed it!
