Slow Cooker Gingered Chickpea and Spicy Tomato Vegan Stew Recipe from Cookin' Canuck

Gingered Chickpea and Spicy Tomato Stew Recipe
This tasty vegan slow cooker stew has ginger and coriander for extra flavor.  (Photo from Cookin' Canuck.)

So many interesting flavors like onion, garlic, fresh ginger, ground and whole coriander seeds, balsamic vinegar, and tomatoes bump up the flavor in this Crockpot Gingered Chickpea and Spicy Tomato Vegan Stew from Cookin' Canuck.  It cooks all day, and then some fresh spinach is stirred in at the end for a touch of color and extra flavor.  This can be a side dish, or serve it over rice for a meatless meal.

Love your new site, and this recipe is great. Made it yesterday, and it cooked for 10 hours on low. I love being able to have the slow cooker going all day. My husband always makes comments when I cook a vegetarian meal, but he loved this.
