If you're a lentil-lover like I am, then you know there are endless combinations of ingredients you can add to lentils to make amazingly delicious soup.  This Vegan Crockpot Lentil Soup from Everyday Maven has carrots, celery, onions, shallots, garlic, and swiss chard, as well as spices like bay leaves, thyme, and cumin, and just a touch of red wine vinegar to brighten up the flavor.  I love the sound of this healthy soup!

  1. This soup looks really good. Using the food processor to finely chop the vegetables really speeds up the assembly process. Love the touch of red wine vinegar at the end. Yum.
