Slow Cooker Asian Corn Cabbage Vegan Soup from Healthy Slow Cooking

Slow Cooker Asian Corn Cabbage Vegan Soup
A different take on cabbage soup that's vegan and has lots of Asian flavors.  (Photo from Healthy Slow Cooking.)

(For Friday Favorites we spotlight past recipes that you may have missed, and this tasty soup would be a good thing to make right now while cabbage is on sale everywhere!)

I'm a fan of cabbage and Sriracha, so any recipe that has both those ingredients sounds interesting to me.  This Slow Cooker Asian Corn Cabbage Vegan Soup from Healthy Slow Cooking combines onions, garlic, ginger, mushrooms, chopped cabbage and corn cooked all day in the slow cooker and then that flavor is livened up with sesame oil, Sriracha, and coconut aminos or light soy sauce stirred in at the end.

  1. I'm always looking for "skinny soup" recipes, and this one fits the bill. I like the idea of adding sesame oil for fresh flavor right at the end.

  2. Lydia, I thought this sounded like such a good combination of flavors in a very diet-friendly soup.
