Slow Cooker Bombay Potatoes Recipe from Kayotic Kitchen

I think this recipe for Slow-Cooked Bombay Potatoes from Kayotic Kitchen has so many of the flavors that people love about Indian food, and Kay says this recipe is crazy simple.  Just saute spices and diced onion for a few minutes, add potatoes and stir to get them coated with all the great flavors, add tomatoes, and a bit of salt and pepper and cook the potatoes in your slow cooker until they're done.  Sprinkle the finished dish with a bit of chopped cilantro or flat-leaf parsley and you've got a flavorful side dish.

I've made a very similar dish in the slow cooker, and I love how easy it is to get those complex Indian flavors while maintaining great texture in the potatoes.

Lydia, I don't eat many potatoes, but I would love to try this with sweet potatoes or cauliflower!
