| Slow cooked pork with Mexican flavors, served with Jalapeno-Cilantro Sauce atop Gorditas. (Photo from Foodfreak.) |
In this recipe for Slow-Cooker Mexican Pork with Gorditas from Foodfreak, pork shoulder is cooked in the slow cooker with onion, garlic, bell peppers, and Mexican spices until the meat is falling-apart tender. Then the flavorful meat is served on top of homemade cornmeal Gorditas with red onion, sliced cabbage, and a delicious-sounding Jalapeno-Cilantro sauce. I think this pork would be equally delicious just served inside a tortilla or just topped with the vegetables and sauce.
