Slow Cooker Pineapple Chicken from Recipe Girl

Chicken thighs or breasts flavored with canned pineapple and cooked all day in the slow cooker.

The slow-cooker is a perfect choice for this type of season-spanning dish when you might like a hot meal at dinnertime but you want to be outside instead of standing over the stove.  Crockpot Pineapple Chicken from Recipe Girl combines chicken, canned pineapple tidbits with juice, Dijon mustard, soy sauce, and garlic in a recipe that can cook all day if you use the chicken thighs that Lori prefers.  (I would use the shorter cooking time on high for chicken breasts.)  Serve over rice or quinoa for a dinner that's ready when you get home.

  5. My only suggestion on this recipe wuld be to maybe double the amt of the ingredients in the liquid. Had some leftovers yesterday and all of the sauce was absorbed by the chicken so it was a little dry . . . but you could always add some crushed pineapple to it the next day.
