Slow Cooker Thai Chicken (Chicken Thais) from Dinner with Julie

There's definitely a pun intended in the naming of these Chicken Thais from Dinner with Julie, and I think it's a charming name for a dish where chicken thighs are cooked in the CrockPot in a Thai-flavored sauce.   This simple recipe only has six ingredients, and Julie says it was so good that her parents stopped by and almost devoured all the leftovers, even though they were cold!

  • Skinless chicken thighs
  • salsa
  • peanut butter
  • soy sauce
  • lime juice
  • grated ginger

  1. Guess, what's in my slow cooker right now? Super simple recipe once I managed to skin and remove some of the fat of 6 chicken legs. Hope it turns out well - it tasted a bit vinegary when I put it in, but that's most likely from the salsa I used.

  3. Kalyn, BF and I liked this. I might consider making the recipe again because it was so easy and quite delcious. BF and I agreed on a rating of 4 out of 5. I liked the peanut butter in it - I've never combined peanut butter with tomatoes (well, in this case salsa) before.

    BTW I've changed my name from Sue to Susanne because there's another Sue around that leaves comments and also uses no icon.
