If you're not familiar with the type of Indian rice pudding known as Kheer, Kathy from Healthy Slow Cooking describes it as "an Indian rice pudding flavored with cardamom that’s speckled with nuts and raisins."  This recipe for Vegan Slow Cooker Kheer from Healthy Slow Cooking starts with brown rice that's cooked in the slow cooker with coconut milk, golden raisins, almonds, and cardamom, and then sweetened with the sweetener of your choice and served with extra raisins and nuts.
