Chicken Tostadas are a great slow cooker dinner any time of year.

(For Friday Favorites we spotlight past recipes that you may have missed, and these Slow Cooker Chicken Tostadas sound easy, family friendly, and delicious.)

I'm drooling over these Slow Cooker Chicken Tostadas from Taste and Tell!   Boneless skinless chicken breasts go in the slow cooker with a little lime juice, a tiny bit of oil, garlic, and some Mexican seasonings and they cook on low for until the meat shreds apart easily.  Serve the meat on tostada shells, and everyone in the family adds whatever other toppings they want.  This recipe seems perfect for any size household; singles or couples could freeze some of the meat for later.

  1. Probably also good on a bed of lettuce. Yum.

  2. Susan, I love that idea. And now I'm wondering why I never made Chicken Taco Salad meat in the slow cooker!
