Happy Easter everyone! After you're through celebrating and start thinking about planning menus for the week ahead, might I recommend this delicious Slow Cooker Kielbasa and White Bean Stew from Kalyn's Kitchen? When I tried this recipe I was skeptical about whether dried beans cooked all day with chicken stock and tomatoes would get soft enough (I'd always heard that cooking beans with tomatoes will keep them from softening.) But I was thrilled with how these beans turned out. You can add the sausage in the morning if you're heading off to work, but if you're home I would add it when the beans are partly done. Then just stir in the spinach when you get home and set the table for dinner!
