I confess I've never eaten Korean shredded beef tacos from a food truck, so I can't give an opinion on how authentic these Slow Cooker Korean Shredded Beef Tacos from A Year of Slow Cooking might be.  But the ingredient list has brown sugar, soy sauce, garlic, onion, ginger root, rice vinegar, sesame oil, and jalapeno, and I'm positive all those flavors have to taste amazing when they cook all day on low with a chuck roast.  There's also a recipe for an Asian cabbage slaw to serve in the tacos.

  1. This is a recipe that I found on that site a while ago and have made it several times. It is absolutely delish! And the slaw is a great side to go with. Really yummy.

    I've fed this to a houseful of kids who ate their tacos happily--even the slaw! (I'm learning the best way to introduce new foods to my kids is to have their friends over, put the food on the table and walk away. They talk amongst themselves and try new things and then peer-pressure (positively!) each other.)
