This recipe for Slow Cooker Refried Beans from 365 Days of Slow Cooking is one of those "why didn't I think of that" recipe ideas. I knew you could could cook dried beans in the slow cooker, but I hadn't thought of turning them into refried beans. It's best to soak the beans overnight, but if you don't remember that Karen has a link for a quick soak method. (Although they are shown in the photo above with cheese and flour tortillas, the beans by themselves are gluten-free, dairy-free, and vegan.)
