I love finding a new slow cooker idea I've never thought of, so I was excited when I saw this recipe for Slow Cooker Roasted Lemon Almond Cornish Hens from Taste and Tell.  The Cornish hens have extra lemon flavor from lemon slices placed inside the cavity and a lemon-butter mixture that's drizzled over them when they're placed in the slow cooker.  You've probably already planned your Easter menu, but if not I think this would make a lovely Easter meal.
