Even though I'm not a vegetarian and probably never will be, I'm trying to eat more meatless meals, and my goal is to have vegetarian recipes for Meatless Monday every week on both my blogs. It's been fun and surprisingly easy to stick to that resolution, and this week's meatless slow cooker recipe is Spicy Southern Chickpeas and Grits from Healthy Slow Cooking. In this tasty sounding dish, bell peppers, garlic, chickpeas, tomatoes, hot sauce, and seasonings cook all day in the slow cooker and then they're served over grits (also made in the slow cooker, recipe included.) If you're not a fan of grits, I think this would be wonderful served over brown rice or quinoa as well.
