When I read through the list of ingredients for this Slow Cooker Coconut Beef from A Year of Slow Cooking, everything on list sounded like a great flavor addition to me.   The recipe starts with beef stew meat that simmers in the slow cooker with onions, coconut milk, lime juice, garlic, brown sugar, curry powder, coriander, cumin, chili paste and a piece of whole ginger root.  The result is a kind of Southeast Asian beef stew that's served over rice.  (And I may need a bit of cilantro on mine as well!)
