In college I ate at Taco Bell nearly every day, and although my addiction to Taco Bell has been cured  for years now, I still love most any recipe that involves refried beans and flour tortillas.  I think this Slow Cooker Mexican Tortilla Pie from 365 Days of Slow Cooking has to be one of the more creative slow cooker recipes I've seen.  Karen uses a foil "sling" to line the slow cooker so she can get this out without it falling apart, and this was a hit with the whole family.
