In this easy Meatless Monday recipe, sweet potatoes and black beans are cooked in the slow cooker with a bit of lime, cumin, coriander, and garlic. After about three hours in the slow cooker the filling for these Sweet Potato and Black Bean Burritos with Lime from Kalyn's Kitchen is ready! I added sour cream, cilantro, cheese, and some shredded lettuce, but you can easily make these vegan or dairy-free if you wish.
