(For Friday Favorites we spotlight past recipes that you may have missed, and this easy beef stew with lots of mushroom flavors sounds like a good thing to make during the holidays. The stew can cook all day while you're out having fun and when you get back home, dinner is ready!)
Beef stew is a slow cooker classic dish, and this version of Wild Mushroom Beef Stew from Chick in the Kitchen gets extra flavor from thyme, vegetable stock, tomato paste, red wine, and garlic, plus the wild mushrooms of course. The beef doesn't have to be browned before you put it in the slow cooker, which makes this recipe easy to get started. Dara says next time she would use mushroom broth for even more flavor, which I think sounds like a great idea.

I like to use dried mushrooms and their soaking liquid to bump up the "meaty" flavor in stews. This looks delicious!
