I love red beans and rice, and this is a dish I'd happily eat for dinner any time of year.  In this version of Slow Cooker Red Beans and Rice from In the Kitchen with Kath, you soak the red beans overnight, start them cooking with spices for an hour on high, then lower the heat to cook on low while you're at work all day.  When you get home cook the sausage and rice and dinner is on the table!  (The hour on high is important to cook red beans safely, or boil the beans on the stove for ten minutes if you're short on time.)

  3. Slow cooker are really made for beans, aren't they? I make black beans in my slow cookers all the time, and now I'm going to try these red beans, too.

  4. Lydia, one thing I love about this recipe is how she puts the sausage in at the end so it stays firm!
