I'm a big fan of Chicago restaurant owner and Mexican chef Rick Bayless, so when Elly from Elly Says Opa said this recipe was adapted from his book Everyday Mexican, that made me pay attention. If you're not familiar with his authentic Mexican cooking style, I think this Slow Cooker Guajillo-Spice Pork and Potatoes from Elly Says Opa sounds like a great way to get your Rick Bayless addiction started. Chunks of pork are cooked in the slow cooker with potatoes and a sauce made from dried Guajillo chilis, canned tomatoes, garlic, oregano, Worcestershire, and a generous amount of salt.
