I was so excited when I discovered you could put rice, dried mushrooms, seasonings, and stock into your slow cooker and a few hours later you'd have a perfect rice dish.  This CrockPot Rice with Dried Mushrooms, Herbs, and Parmesan from Kalyn's Kitchen is a great way to get a side dish when it's too hot to heat up the house.  I think this would also be a good recipe if you want to get a head-start on dinner when you go to church!
