Slow Cooker Salsa Pork from Taste and Tell

(For Friday Favorites we spotlight past recipes that you may have missed, and I think this Slow Cooker Salsa Pork is something that would taste good any time of year!)

I love this easy dinner idea of Slow Cooker Salsa Pork from Taste and Tell.  The boneless pork roast is trimmed and placed in the slow cooker, then it's cooked in salsa verde and chicken stock with some onion, tomatoes and cumin.  When the pork pulls apart, the sauce is reduced on the stove and the flavorful pork mixture is served over rice with cilantro and sour cream to garnish as desired!

Ingredients for this Slow Cooker Recipe:
  • boneless pork roast
  • prepared salsa verde
  • chickenbroth
  • onion
  • ground cumin
  • plum tomatoes
  • fresh cilantro
  • sour cream
  • rice, for serving (or use cauliflower rice for a low-carb option)
