(For Friday Favorites we spotlight past recipes that you may have missed, and these Slow Cooker Shredded Beef Tacos with Spicy Slaw and Avocado would be great to make on a busy summer weekend when you're gone all day and would like a nice meal waiting in the CrockPot when you get home.)

A few weeks ago I became fixated on the idea of making a delicious slow cooker shredded beef mixture to use for tacos, and these Slow Cooker Shredded Beef Tacos with Spicy Slaw and Avocado from Kalyn's Kitchen are the final result (after a couple of tries that needed improvement.)  I promise the meat for these tacos is loaded with flavor, and you can cook the tacos in the CrockPot when it's too hot to turn on the stove!

I've made beef for French dip in my slow cooker, but never thought to make taco meat!

I made this a couple of weeks ago. It was very good, but made so much meat that I ended up freezing some of it.

Lynn, glad you liked it! I froze some of mine too and loved having it ready for a quick dinner.
