Lamb is probably something that's not on the menu that often for most families, but lamb shanks are much more affordable than other cuts and I love the sound of these Slow-Cooker Tomatillo Braised Lamb Shanks from Katy She Cooks.  The recipe for Katy's homemade tomatillo salsa is included, but she says you can also make it with tomatillo salsa from a jar.  Katy served the tender braised lamb inside flour tortillas to make tacos, but she also recommends serving the meat over Spanish rice with the sauce spooned over the top.
