Slow Cooker Vegetarian Stuffed Bell Peppers from A Year of Slow Cooking

I'm noticing that peppers are really inexpensive lately in my favorite local market, so maybe that's one reason this recipe appealed to me.  That and the fact that it's a meatless dish, just in time for Meatless Monday tomorrow for anyone who's trying to cut down on meat.  The recipe for Slow Cooker Vegetarian Stuffed Bell Peppers from A Year of Slow Cooking combines corn, black beans, pasta sauce, onion, rice, cheese, and a few spices to make the mixture that's stuff into raw peppers.  Then the peppers "bake" in the slow cooker and your house stays cool!  Stephanie says carnivores can also add some meat to the filling if you don't care about it being a veggie dish.
