Rick Bayless is famous for bringing authentic Mexican flavors to all parts of the world, and Kristen from Dinner du Jour tried this recipe for Smoky Pork Tacos with Avocado and Feta in Ireland, bemoaning the fact that this was probably the closest she was going to get to Mexico for a while.  This variation of the famous Rick Bayless Pork Tinga Tacos has so many interesting flavors going on with the pork, including Chipotle chiles, fire-roasted tomatoes, Worcestershire sauce, garlic, and Chorizo, and everything about this recipe sounds amazing to me!

    Even harder to get chipotle etc here.
