You can serve this chipotle, apple juice, onion, and honey flavored shredded beef on sandwiches or wrapped in tortillas, or just serve over greens for a lower carb option.  This recipe can cook all day, so it would also make an easy back-to-schoo meal for a busy parent.  And Lydia says this freezes well, so you might want to double the recipe if you have a large slow cooker.
