Slow Cooker Tropical Chicken from Black Girl Chef's Whites

Something about this Slow Cooker Tropical Chicken from Black Girl Chef's Whites just screams summer to me, and using the slow cooker means that your house stays cool while it's cooking.  The chicken pieces cook in a mixture of coconut milk and canned pineapple with extra flavor from dried mango, onion, garlic, and ginger.  Cheryl recommends you serve it over rice, quinoa, or another type of grain to soak up all the flavorful juice.
