I'd never heard of black garbanzo beans until I got some as a gift, but I loved the nutty flavor and the slightly chewy texture they added to this Slow Cooker Vegan Black Garbanzo Bean Curry from Kalyn's Kitchen.  The black garbanzos took a long time to get done, so this would be a perfect Meatless Monday dish to cook while you're at work all day.  If you can't find black garbanzos or don't want to bother with this unusual ingredient, I think you could make this with regular garbanzos but they might cook a little faster.
