I'm kind of on a one-woman crusade among some friends to get them to be more open minded about eggplant.  I admit I was a late convert to the subtle flavor of this late-summer vegetable, but now I grow it myself and I'm always looking for delicious-sounding eggplant recipes.  This Slow Cooker Punjabi Eggplant and Potatoes from the Perfect Pantry sounds like it has just enough interesting spices to make the eggplant sit up and pay attention, and I'd be thrilled to have this for a Meatless Monday dinner!

  1. Thanks for featuring this recipe today -- I have an eggplant sitting on the counter, and wasn't quite sure what I would do with it. Now you've reminded me that this Indian-inspired dish would be perfect.
