When I read this post where Stephanie from A Year of Slow Cooking said she would have never tried a recipe like this one for Honey Beans with Spinach before she started using her slow cooker, I felt like she was speaking directly to me.  I love the way you can put a bunch of healthful ingredients like black beans, garbanzos, sweet potatoes, onion, honey, and spinach into the slow cooker with some well-chosen seasonings and come out with a delicious vegetarian stew, and this sounds like a perfect Meatless Monday dish!

  2. Lydia, I am thinking the honey might even thicken it a little as well as adding flavor. Agreed, great idea.

  3. I made this a couple days ago and it was soooo sweet! Too much honey called for in this recipe, in my opinion. The only change I made to the recipe is use kale instead of spinach, but even this more bitter green didn't tone down the sweetness. I've added more lemon and am thinking about adding olives or capers and baking it into an empanada type thing to save it, but I may just throw the whole thing out.
