My garden is still giving me vegetables (including volunteer tomatillos that come up randomly), but there is a fall-like feeling in the air at night, and this soup with summer-into-fall flavors seems perfect for a Meatless Monday dinner at this time of year.  This CrockPot Vegetarian Black Bean and Tomatillo Soup with Lime and Cilantro from Kalyn's Kitchen has some of my favorite flavors, but if you're not a cilantro fan you could certainly leave it out.  Use vegetarian stock for a vegan version.
