| Boneless chicken cooked in a mixture of chiles, tomatoes, spices, and ground peanuts! (Photo from The Perfect Pantry.) |
I love the slow cooker recipes that include lots of different flavors. This recipe for Slow Cooker Chicken in Peanut and Chile Sauce from The Perfect Pantry starts with boneless chicken pieces that are cooked in a pureed mixture that includes two kinds of chiles, tomatoes, onions, garlic, and peanuts, as well as lots of spices to really bump up the flavor. Lydia says you can eat this rolled up into a tortilla or enjoy it on a plate with some rice and beans like you see in the photo. She made this in the middle of summer when she didn't want to heat up the kitchen, but I think this sounds like it would be delicious any time of year!

Thanks, Kalyn. This is a recipe I've made over and over, and it pairs especially well with the rice and beans. (I have to admit it tastes pretty good cold, too, when you nibble some for breakfast!)
Lydia, everything about this looks like a winner to me!
This looks absolutely fantastic! I just got my first slow-cooker a couple months ago + have already used it 10+ times. I love it! You can check out my slow-cooker recipes at http://www.fearlesshomemaker.com/category/cooking/crock-pot-slow-cooker/ - I'm hoping to add lots more soon! =)
Amy, fun to hear from a slow cooker convert. If you have recipes you think are especially good, would love to have you submit them.
