It's officially fall, but in Utah my garden hasn't gotten the memo and I'm still getting lots of vegetables. Kale and zucchini are plentiful in my garden, so I loved that this Vegetarian Barley Soup from Chick in the Kitchen used both of those as well as tomatoes, carrots, celery and cannellini beans. The soup also has barley (one of my favorite soup ingredients) and lots of flavorings that made it sound delicious to me!
