Busy evenings can be a dilemma for families who usually eat dinner together, but long-cooking soups like this Black Bean Soup with Five Peppers and Ham from Andrea Meyers can help everyone get fed. The soup starts with black beans that are soaked overnight. The next morning put the ham bone, soaked beans, peppers (5 kinds!), onions, tomatoes, chile powder, garlic and water in the slow cooker and let it cook away all day, as long as 9 or 10 hours if needed. (You can skip the ham and use a rich vegetable stock for a vegan version if you prefer.)

I love soups like this! One hint, for those who don't eat ham (like me): use barbecue sauce to get some smoky flavor into your soup.
