Slow Cooker Black Bean Soup with Five Peppers and Ham from Andrea Meyers

This delicious Black Bean Soup with Five Peppers and Ham can cook all day!

(For Friday Favorites we spotlight past recipes that you may have missed, and this long-cooking black bean soup with ham is a perfect cook-all-day meal while the kids are in school.)

Busy evenings can be a dilemma for families who usually eat dinner together, but long-cooking soups like this Black Bean Soup with Five Peppers and Ham from Andrea Meyers can help everyone get fed.  The soup starts with black beans that are soaked overnight.  The next morning put the ham bone, soaked beans, peppers (5 kinds!), onions, tomatoes, chile powder, garlic and water in the slow cooker and let it cook away all day, as long as 9 or 10 hours if needed.  (You can skip the ham and use a rich vegetable stock for a vegan version if you prefer.)

  • red bell pepper
  • green bell pepper
  • Jalapeno chile pepper
  • Anaheim chile pepper
  • Chipotle chile pepper
  • red onion
  • tomatoes
  • chili powder
  • garlic

  • pepper

  1. I love soups like this! One hint, for those who don't eat ham (like me): use barbecue sauce to get some smoky flavor into your soup.

Oooh, perfect timing on this one, Kalyn and Andrea, as I just picked up some black beans, have tomatoes and peppers that need to be used, and have several ham bones in the freezer to choose from. I'm soaking the beans now and will put this recipe in the slow cooker before I go to bed and let it cook while I'm sleeping tonight. It will be great for breakfast (and probably all my meals) tomorrow. Hubby is away and I find myself neglecting my meals, so this recipe is the perfect solution. :-) Thanks!
