My love for lentils is well-documented, but for soup I especially love red lentils, which cook quickly and dissolve to thicken the soup. When I created this CrockPot Red Lentil, Chickpea, and Tomato Soup with Smoked Paprika for Kalyn's Kitchen, it took me a few tries to get it just right, but I served the final version to my brother Mark and his wife Lisa when they stopped for a visit, and both of them gave it a thumbs up! This is a perfect recipe for a Meatless Monday dinner, and it's vegan if you use vegetable stock.

Oh, this does sound like a great soup, Kalyn! It has some of my very favorite ingredients and smoked paprika always adds such a nice flavor. I only discovered it a few years ago, but love it!
