I want to share one more suggestion for using the slow cooker on Thanksgiving before I take most of the week off to spend the holiday with some of my favorite kids. Mashed potatoes are definitely a Thanksgiving "must-have" for most families, and using the slow cooker to cook the potatoes, or to keep them warm during the time your stove is in overdrive can really help on that busy cooking day. (And these mashed potatoes are all vegetarian, so I hope no one is too upset if I count this as the Meatless Monday post for this week.
