Pot roast is one of those made-for-the-slow-cooker kind of meals, and there are endless delicious variations of slow cooker pot roast for beef lovers to try.  I love everything about the simple but perfect recipe for this Slow Cooker Tex-Mex Pot Roast from The Perfect Pantry, which starts with a trimmed roast that's rubbed with cumin and chili powder and then browned all over.  Then it simmers most of the day on low with onion, tomatoes, and green chiles.  Doesn't that sound like a great dinner?

Thanks for featuring this recipe! I'd forgotten how really good it is, and now I realize I must make some this weekend. It's a great make-ahead-and-freeze dish.
