Today's my birthday, and chances are I'll be eating dinner tonight at my favorite Mexican restaurant.  But if you're not going out for Mexican food, I think these Slow Cooker Chicken Enchiladas from Skinny Ms. sound like a wonderful Mexican meal at home.  This recipe starts with two chicken breasts that you cook in the oven, but if you have some pre-cooked shredded chicken, you could certainly use that.
