When this delicious-looking Slow Cooker Pork Posole Stew from Foodie Crush popped up in my feed reader, my first thought was how much my late father would have enjoyed this recipe, followed immediately by the thought that I must share it right away with readers of Slow Cooker from Scratch.  The word "posole" in the title refers to the white hominy that is traditional in this Mexican dish, and I think Heidi's version of Pork Posole looks spectacular.

Ingredients for this CrockPot Recipe:
  • Boston Butt Pork Roast
  • onion
  • garlic
  • chicken stock
  • lime
  • jalapeno peppers
  • bay leaves
  • canned Rotel tomatoes with green chiles
  • cilantro
  • carrots
  • hominy
  • pepper
  • salt

  1. I know pork is traditional with posole, but I'd love to try this with chicken or turkey.
