I may have let out a tiny squeal when I spotted this recipe for Slow Cooker Cheesy Scalloped Potatoes, because it meant my friends Todd and Diane from White on Rice Couple had gotten their first slow cooker!  I think scalloped potatoes are just about the ultimate comfort food, but even if you're not in need of comfort this would make an easy, cheesy, creamy side dish the next time you're making dinner for friends.  Diane used a large slow cooker to make a big batch of these for a Christmas pot-luck, but if you cut the recipe in half for a smaller slow cooker they will cook more quickly.

  2. I made this for a recent potluck and it was delicious. I did add about 1 1/2 cups of chopped ham since it was my dish to pass not just a standard side. I will make this again!
