It's pretty obvious that dried beans are one of my favorite choices for Meatless Monday meals, and I think this Slow Cooker Tuscan White Bean and Roasted Garlic Soup from Skinnytaste sounds perfect as a starter or main dish soup for a cold winter night.  Gina starts with dried, unsoaked beans, and adding roasted garlic is what she says takes this soup recipe from good to great!
