You can never have too many easy chicken recipes for the slow cooker, and this tasty-sounding Slow Cooker Chicken Thighs Osso Buco from Simple Nourished Living goes into the slow cooker in minutes, and about four hours later you have flavorful chicken for dinner.  When it's done garlic, lemon zest, and chopped parsley is combined to make Gremolata to sprinkle over the dish, which is where it gets the name Osso Buco.  Martha served this with potatoes, but I think it would also be delicious over rice.

Lydia this sounded so good to me, except I would have to use a LOT more gremolata (love the lemon zest-parsley combination.)
