I love lentils, and through the years I've made a lot of good soups using them, but this Slow Cooker Vegetarian Greek Lentil Soup with Tomatoes, Spinach, and Feta from Kalyn's Kitchen just might be my favorite lentil soup so far!  The soup is loaded with veggie goodness, and if you use vegetable stock and skip the Feta, it can easily be vegan.  And this is a perfect recipe to cook all day on low while you're at work; when you get home just turn to high and add the spinach and dinner will be ready in about 30 minutes.

  1. It's only recently that I tried Greek flavors and feta with lentils. What a fantastic combination! And lentils and slow cookers were made for each other.
