I know there are many recipes for Mexican type pulled pork in the slow cooker, but what caught my eye about this Slow Cooker Mexican Pulled Pork from Simply Recipes is the amazing-sounding spice rub the pork marinates in before it cooks.  Then Elise browns the meat, which brings out the flavor of the spices even more.  Everything about this recipe sounds like a winner to me, and it can cook all day while you're at work or out having fun.

Tried this out yesterday - I was a bit skeptical of the simple technique, but it was delicious! I did add a splash of chicken broth to the frying pan after I browned the meat, to collect all the bits of spice that were stuck (also, not much fat had rendered out). The flavor was a great combo, not too spicy, but not bland at all.

We served it on corn tortillas with avocado, sauteed red peppers, sour cream & a squeeze of lime.
