Yesterday was the one year anniversary of Slow Cooker from Scratch, and I'd like to welcome any new readers who might have found us on Pinterest or Facebook, where the site got a lot of mentions!  This recipe for Crock Pot Picadillo from Skinnytaste is exactly the type of from-scratch slow cooker recipe I love to feature here, a Cuban dish made of ground beef that's been simmered in the slow cooker in a sauce that includes tomatoes, green olives, bell peppers, cumin, and spices.

Gina recommends eating this over brown rice, but you could also eat it plain or with Cauliflower Rice for a low-carb or South Beach Diet Phase one main dish.

Ingredients for this CrockPot Recipe:
  • lean ground beef
  • onion
  • red peppers
  • garlic
  • cilantro
  • tomato
  • Alcaparrado (Manzanilla olives, pimientos, capers) or green olives
  • ground cumin
  • garlic powder
  • bay leaves
  • kosher salt and fresh pepper
