My friend Lydia readily admits that this Slow Cooker Vegan Spicy Pinto Bean Chili with Corn and Kale from The Perfect Pantry might not win any chili beauty contests, but everything about this vegan chili spiced up with cumin, green chiles, Jalapenos, and Guajillo chiles sounds just delicious to me.  Just squeeze some lime over the finished chili and this would make a tasty Meatless Monday dinner!

  1. Here in Tennessee there is a limited variety of Chili peppers. Is there a substitute for guajillo chile peppers? Thanks, Tina.
