I'm a huge fan of lentils of every type, but I especially love the way yellow lentils add color to soup. In this Yellow Lentil and Spinach Vegan Soup from Soup Chick, yellow lentils simmer in the slow cooker with ginger paste, garlic, tomato paste, cumin, coriander, garam masala, turmeric, salt, pepper, and a generous amount of water. Then when the lentils are starting to fall apart, the soup is finished with coconut milk and spinach. I love Indian flavors with lentils, so this sounds like a wonderful Meatless Monday dinner to me.

Thanks so much for featuring one of my Soup Chick original soups today. I love lentils in all forms, and all colors, and I especially love them with Indian flavors.
