Slow Cooker Indian-Spiced Vegan Red Lentil Soup with Spinach and Coconut Milk from Kalyn's Kitchen

If you haven't experimented with Indian spices in the slow cooker, this Slow Cooker Indian-Spiced Vegan Red Lentil Soup with Spinach and Coconut Milk from Kalyn's Kitchen would be a delicious soup to get you started.  There's not a lot of heat in the soup, but the turmeric and other spices add a delightful flavor and beautiful yellow color to this soup.  Start this soup after lunch and add the spinach and coconut milk 30 minutes before you want to eat dinner, and you'll have a perfect Meatless Monday meal on the table.
